Healthy veggie breakfast muffins with superfoods

Finding healthy foods to feed your baby can be a challenging task. It’s a constant struggle between worrying if your feeding your baby enough nutritious foods, or just trying to find something they like in general. As a new mom I now not only have to make sure I am getting enough nutritious foods into my body, but now I have to make sure my baby is getting adequate nutrition as well! Feeding him the everyday Cheerios as a snack is easy, but I want to make sure I expose him to a wide variety of foods.

I have created a recipe that is packed with nutrients, and it is not only good for the baby but moms can enjoy it too! These veggie packed muffins can be made in advance and stored in the fridge or freezer until they are ready to be eaten. For all those picky eaters out there, these muffins sneak in 4 different vegetables and you can’t even tell!

Im not going to lie I was a little hesitant making these muffins. Maverick was napping and I pretty much just threw a bunch of stuff together and was hoping for the best. To my surprise these were realllyyyyy good! I let Maverick have one after nap time and he loved them as well. I ended up having 2 while he had his one, but I didn’t feel guilty because there is no added sugar, they have a ton of vegetables, and the only flour I used was oat flour and oats are great for lactation. SO these muffins are not only great for babies, toddlers, moms, dads, breastfeeding moms, but pretty much anyone!

These are my staple supplies when creating any kind of muffin recipe:

  1. Silicon muffin tins

  2. Martha Stewart mixing bowls

  3. Vitamix

I make a couple dozen of these muffins, and they are the perfect snack to eat throughout the day, or even as a breakfast food. These healthy breakfast muffins are packed with superfoods such as kale, spinach, Swiss chard, and hemp seeds. I also added in some zucchini to sneak some extra vegetables in.

I started by throwing all my vegetables and wet ingredients into my vitamix blender. I put all of the vegetables in whole, and let the vitamix do the chopping for me. Everything gets mixed at the same time that the vegetables get chopped. It’s all about killing two birds with one stone when you are a mom. After I had the wet ingredients blended I poured those all into my fancy Martha Stewart mixing bowls, I cleaned out the blender and did the same thing with all my dry ingredients. I used oat flour as my flour for these muffins, so I placed whole oats in the blender along side all the other dry ingredients and blended it, so again ingredients get mixed while creating this oat flour.

After the dry ingredients are ready I poured my dry mixture of oat flour into the wet ingredients with the vegetable and combined them all together. The trick is to bake them in silicon baking trays. No cupcake liners are needed and they pop right out once they have cooled. It makes for an easy clean up. These are the only cupcake trays I ever use, they are seriously a game changer!

ok let’s get to it! Follow the recipe below for yummy superfood packed muffins.

Ingredients:

  • 2 cups super greens blend (baby chard, baby kale, baby spinach)

  • 1.5 bananas

  • 1/4c apple sauce

  • 1 small container yogurt (I used vanilla flavored coconut milk yogurt)

  • 2 Tbsp coconut oil

  • 1/3c maple syrup

  • 2c oat flour

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 1/2 tsp baking soda

  • handful of hemp seeds to sprinkle on top of each muffin

Directions:

  1. Mix all veggies & wet ingredients (first seven ingredients) together in the vitamix. Blend well!

  2. Return wet ingredients into a mixing bowl & combine all your dry ingredients into the vitamix, blend until your oats are at a flour consistency.

  3. Combine your dry ingredients into your bowl with your wet ingredients. Gently fold until all ingredients are combined.

  4. Fill your silicon muffin pans with batter about 3/4 of the way.

  5. Top each muffin with a small sprinkle of hemp seeds

  6. Bake at 350 for 15-20 minutes

  7. Let them cool, pop them out, & enjoy!

  8. Refrigerate or freeze leftovers!
